Our recipe for Geysir bread

Geysirbread

In a big mixer put

  • 2.2 liters water
  • 1kg sugar
  • 2kg rye flour
  • 2 tbsp salt
  • 150 ml dry yeast
  • Mix for a minute
  • Add 1 liter regular flour
  • Add 1 liter whole-wheat flour
  • Mix for about 4 minutes
  • Spray 10 buckets with non-stick spray
  • Best to use latex glove and warm water to
  • Add about 650g of dough to each bucket
  • Lids on top of the buckets and into a tray
  • Place in the steam hole for 24 hours
